We are proud to be featured on the San Diego Westways Magazine.

” Though the Neapolitan is still the dominant style in the U.S., the national pizza scene has seen a surge in the proliferation of pinsa, a pizza-like flatbread said to date back to the Roman Empire. This take-out-and-delivery-only-spot is dedicated to the oval-shaped pies whose dough, a mix of wheat, rice and soy flours, is fermented for 72 hours, resulting in a crisp but tender crust that’s lighter than a traditional pizza base. The 12-by-9-inch flatbreads includes two with topping combos inspired by some of Rome’s most famous pasta dishes; the amatriciana features red sauce with mozzarella, pecorino and guanciale or cured pork jowl while the cacio e pepe is blancketed with mozzarella, pecorino, parmesan walnuts and aliberal dusting of black pepper. The backery, which hand-stretches mozzarella as well as caciocavallo, and aged cheese molded in the form a gourd, also offers several varieties of take-and-bake pinsa.”

Hera at Pinsarella we’re developing more and more recipes and flour mix to take pizza to the next level.
Here’s our Spirulina Pinsa Curst line, healthy superfood is served!

We’re always developing new dough and new special recipes to serve Roman Pizza.
Spirulina pinsa is our last effort to merge the Italian food tradition with this special superfood that has great nutritional properties.

What’s Spirulina?

Spirulina pinsaSpirulina is a seaweed that, thanks to its many beneficial properties, it is considered a “superfood”. But what exactly is spirulina and what is it for?

According to many studies, the combination of carotenoids, ascorbic acid and vitamin E, should give spirulina important antioxidant properties. In addition, to these components are added the effects of some pigments such as phycobilins and chlorophyll: thanks to this union it would be able to protect the body from free radicals, removing neurodegenerative diseases and some tumor forms.

The combination of essential amino acids and beta-carotene, on the other hand, would give spirulina great powers in stimulating the immune system. In fact, this alga is characterized by good immunomodulatory properties, which allow the body’s immune response to be regulated and made more efficient.

Energy, endurance and cholesterol
Also from the point of view of the energy given to the body, spirulina would be a particularly useful product in periods of poor physical and mental resistance. In large doses, in fact, it would help athletes improve their performance, increase fatigue resistance and improve performance under stress. Its content in ferridoxine and biotin, during intense muscular efforts, help slow down the formation of lactic acid.
According to some studies, spirulina would help fight allergic rhinitis symptoms, such as respiratory tract congestion and localized itchy phenomena.
A study dating back to 2007 showed that the daily intake of only 4.5 grams of this food for a period of 6 weeks resulted in the test patients the reduction of total cholesterol and triglycerides, the increase in “good” cholesterol (HDL ) at the expense of the “bad” one (LDL) and a drop in systolic and diastolic blood pressure.

Other beneficial effects: hay fever, HIV, malnutrition, diabetes
A 2005 study published in the Journal of Medicinal Food showed that the administration of spirulina is protective against hay fever.

According to research carried out in vitro in 2012, spirulina has an inhibitory effect against the replication of the HIV virus in different types of human cells.

Thanks to the administration of spirulina on children suffering from malnutrition or malnutrition it would be possible to cure anemia, while stimulating an increase in body weight. For this reason, its applications especially in the poorest countries are being examined by the international medical community.
Spirulina can also be used in the treatment of arsenic poisoning, because it is effective against keratosis and melanosis.

Several studies have shown how effective this alga is in reducing blood sugar levels, helping the effectiveness of antidiabetic drugs.
Most of these studies, however, are often contested for sampling limits: they are often research conducted on very small groups of patients and for limited periods of time.

Try our special roman pizza with spirulina,  Tasty and Healthy, ready to bake and serve in 5 minutes.

Margherita, capricciosa or Pepperoni? Maybe we don’t know immediately what’s our favorite pizza but we would certainly eat it every day! Discover with us who invented the pizza.
Even if the pizza considered original of the Italian (and above all Neapolitan) culinary tradition in the world, Egyptians, Greeks and Romans also cooked very similar flatbreads!

Pizza has a really long, very complex and uncertain history, however the first attestations of the word date back to 997 near Gaeta (Lazio Italy): the term “Pinsa” was used to call the rounded flatbread that people used to eat in those rural areas.
In ancient times in the Mediterranean Pinsa crust was a very poor dish topped with lard, cheese and basil (sometimes with fish scraps) widespread in all regions.

Pizza can have many variations and ingredients
… No pineapple though!
The first news about Neapolitan pizza dates back to the period from 1715 to 1725 when Vincenzo Corrado wrote a valuable treatise on the eating habits of the city of Naples, in which he observed how it was the custom of the people to season pizza and macaroni with tomato sauce.
Until about 1830, pizza was sold in Napoli exclusively as street food by many vendors outside the bakeries, then the ancient Port’Alba pizzeria opened in 1830, and it is considered the oldest in the world.
Port’Alba pizzeria is located in the historic center of the city of Naples, at the beginning of the major decuman, in via Port’Alba.

The first version of Margherita pizza as we know in Italy dates back to 1889 when the Neapolitan chef Raffaele Esposito created the pizza Margherita (tricolor) in honor of Queen Margherita of Savoy: tomato, mozzarella and basil to honor the colors of the National Flag and the Queen of Italy.

In 1895 Gennaro Lombardi emigrated from Naples and came to New York where he made pizza in a bakery on Mulberry Street, using the same dough recipe his father and grandfather had used in Naples. Lombardi soon decided to sell pizza and in 1905 was issued a license by the City of New York, becoming America’s First Pizzeria.
