Not many people know that the the first written testimony of the carbonara recipe dates back to 1952 and appeared not in Italy but in United States, in a Cookbook signed by two Italians, owners of the Armando’s Restaurant in Chicago.

Since then it has been a dish cooked in a thousand versions and by the hand of many chefs, each of whom has given his own version of this beloved recipe.

This is our pinsa carbonara recipe, made with our special Roman pizza pre baked crust topped with eggs bacon parmesan and pecorino cheese.
A tribute to this unique recipe born from the union of American and Italian cultures.

Ingredients

  • 1 1 Pinsa Crust

  • 7 7 slices of Bacon

  • 1 1 Egg Yolk

  • 1.70 Oz 1.70 diced mozzarella

  • 1.00 Oz 1.00 Grated parmesan

  • 1.00 Oz 1.00 Grated pecorino

  • black pepper to taste

Directions

  • preheat the oven to the max temperature
  • take the pinsarella crust
  • Sprinkle with grated parmesan and pecorino cheese
  • Add diced mozzarella
  • Top with 4/5 slice of bacon
  • Bake for approximately 8 minutes or until the crust is golden brown.
  • Wishk an egg yolk with black pepper an pour it gently on the pinsa.
  • Bake again for just few seconds
  • Sprinkle with pecorino romano and black pepper to taste and BUON APPETITO.
